Marinades are an excellent way to add flavor to meat and fish. For those of us eating Paleo/Zone, marinades also come in handy for keeping lean cuts of meat tender as they cook. A well-marbled steak is easy to keep juicy, but a lean cut of beef or pork will dry out quickly in the hands of an inexperienced cook. (I'll talk more about keeping lean mean moist in upcoming posts.)

A marinade invariably includes an acid. Here's Harold McGee, the great distiller of science and food knowledge, on why acids work:

"In chemical terms, an acid is a substance that readily releases protons, the small reactive nuclei of hydrogen atoms. Water is a weak acid, and living cells are designed to operate while bathed in it. But strong acids flood living cells with more protons than they can handle, and cripple their chemical machinery. This why acids are good at preserving food: they cripple microbes."

Tried doing Annie today at my gym in Tokyo... I was just about to start the 20 rep round when an attendant told me to stop since "jumping rope is dangerous." Sigh, I miss CFB... although Tokyo is awesome :)

Man EC was looking strong with that sledge last Saturday.

Coach's wifes' cute hottie friend got to watch me dump a 295 lbs front squat and scream like a little girl. The woman wouldn't even make eye contact with me after the failed squat attempt. Guess I need to train more for that one! j/k

Tough conditions this morning - like working through water... Pretty good Fran for me, but 20s off my PR. Almost did the 21 set unbroken but dropped off the bar at 16. Good time this morning with a packed gym... 5:33 Rx'd

Been busy at the firehouse, so I've been missing workouts. I want to get my beach muscles up for my trip to ND @ the end of July.
Oh yeah there aren't any beaches in ND, and this isn't a beach muscle gym.

alan, double unders are very dangerous. so is squatting below parallel, grunting, and the use of chalk.

Anything that causes sweat is dangerous. Also at birth, we have a finite number of heartbeats and it's wise to ration them slowly.
